Peanut Butter Cookies

Hello Everyone! I trust you are having a great Tuesday so far!

Last night while I was at home, I deemed it necessary to bake some sort of sweet to fill the sweets craving I have been having for the last week or so.  Luckily, I did some reorganization on my Pinterest boards that made searching for a dessert easy peasy.

I came across a recipe for "Perfect Peanut Butter Cookies" and they caught my attention right away and luckily I had the ingredients in my kitchen! Here is what I ended up with! 


What You Need:
  • 1 Cup (2 Sticks) Butter - Room Temperature
  • 1 Cup Brown Sugar
  • 1 Cup Sugar
  • 1 1/2 Cups Peanut Butter
  • 2 Eggs
  • 2 1/2 Cups Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Vanilla
  • Extra sugar to roll the dough in

How to Make the Cookies

Preheat the over to 350° F.

In a mixing bowl, combine the butter, brown sugar, sugar and peanut butter together.  Mix until creamy.  Add the eggs to the butter mixture one at a time until well blended.  Add the vanilla and mix well.

In a separate bowl, combine the flour and baking soda.  

Add the flour mixture to the mixing bowl a bit at a time allowing the flour to be completely blended after each addition.

In a different separate bowl, place 1/2 cup sugar.

Once the dough is ready, begin rolling it into 1" balls (or larger if you'd like) and roll them in the sugar.

Place on an ungreased cookie sheet and bake for 12 minutes or until golden brown.


Remove from the sheet and enjoy with a large class of milk!
