Quick & Cozy Breakfast Ideas

Saturday, March 7, 2026

Hello and happy Saturday friends! I hope your weekend is off to a great start and you have some fun things on the schedule today.

There’s something about a cozy breakfast that just makes the whole day feel a little better. Even on busy mornings, I love taking a few minutes to make something that feels comforting and a little bit indulgent. It doesn’t have to be complicated or time-consuming — sometimes the simplest breakfasts end up being the most satisfying.

Today I’m sharing a few quick and cozy breakfast ideas that are easy to make but still feel like a treat. These are perfect for slow mornings, work-from-home days, or even when you just want to romanticize your weekday routine a little bit.

Quick and Cozy Breakfast Ideas

1. Sausage Hashbrown Breakfast Casserole from Eighteen25

I absolutely love this breakfast and the best part is it's easy to make ahead and refrigerate or freeze for the week. AND, you can switch up the experience by changing what additives you put with the casserole. Don't like sausage? Exchange it for bacon. Want more veggies in your died? Add them in the mix.

Check out the full recipe here: Sausage Hashbrown Casserole from Eighteen25

Why I love it: It’s quick, filling, and feels like a cozy little breakfast moment without much effort.

2. Easy Bacon Egg Breakfast Burritos from Hilary Recipes

Don't want have to think of meals for the week? Then this one is for you. Make a bunch of these ahead and throw in the freezer so that when you don't have time to think about breakfast, you can pop one into the microwave and be on your merry way.

Check out the full recipe here: Hilary Recipes

Why I love it:
It takes just a few minutes to put together but can make a bunch so you don't have to think. Plus, they freeze wonderfully.

3. Sheet Pan Pancakes by Belly Full

If you’re someone who prefers a breakfast that’s quick but still cozy and satisfying, this one is such a good option. Plus, you just throw it all in one pan and bake away so you don't have as much mess. The best part? It's completely customizable - just add whatever topping you'd want and go.

Check out the full recipe here: Belly Full

Why I love it:
It’s simple, customizable, and perfect for larger groups or for a few people (if you use a smaller pan). Plus, if you add protein to the mix it adds and easy way to get protein in your day.

Creating a Cozy Breakfast Moment
For me, breakfast isn’t just about the food — it’s also about creating a small cozy moment before the day gets busy. A few little things that make it feel extra special:
  • Using a favorite mug for coffee or tea
  • Lighting a candle while I eat
  • Sitting down to read a few pages of a book
  • Putting on some calm music or a comfort show
Even just five or ten quiet minutes in the morning can make such a difference.

What are your favorite cozy breakfast ideas? I’m always looking for new things to try, so feel free to share in the comments!

Have a wonderful day,
Jackie

5 Quick and Easy Recipes for Busy Weeknights

Monday, March 2, 2026

Hey friends! 🌟

If you’re anything like me, weeknights can be a bit hectic. Between work, errands, and trying to sneak in a little me-time, the last thing I want is a complicated meal that takes forever to make. That’s why I love having a few simple, go-to weeknight meals that are both delicious and easy to whip up. Tonight, I’m sharing five of our favorite recipes for busy weeksplus a few tips for making weeknight dinners as stress-free as possible.

1. Skillet Lasagna - Lil' Luna

If you love lasagna, but don't love the time and mess of lasagna, then I would highly recommend checking out Lil' Luna's Skillet Lasagna. It is so easy to make, only takes one pan and the left overs are so delicious.

Quick Tip: You can substitute ground turkey or chicken in exchange for the beef and it is just as delicious. I imaging it would be very good with Italian sausage as well.

Find the recipe here: Lil' Luna's Skillet Lasagna

2. One Pan Roasted Sausage and Veggies - My Mommy Style

When we are having a crazy busy week, this is a meal that often pops up because it is so easy and it also creates very little mess. I found the recipe over on My Mommy Style's blog and she shared it as a meal prepping tip; however, this makes a good quick dinner too.

When we make ours, we use  turkey sausage, broccoli and sweet potatoes; however, you can use any veggie or potato that cooks well in an oven.

Meal Prep Tip: Cutting your potatoes down into smaller sizes makes the cooking time go faster and the potatoes less prone to crunchiness. We also serve this over rice, but you can eat it without.

3. Creamy White Lasagna Soup by Half Baked Harvest

I am a sucker for a good soup no matter what time of year it is and when my friend recommended this one to me last year, it quickly became a household staple. There is nothing better than a crock pot meal that is easy to get started and does not require much thought. Not to mention, it is sooooooooooo delicious.

Pro Tip: The recipe calls for red pepper flakes. If you are not a spicy kinda person, I would advise either not putting them at all or adding them after serving. The soup was very good without the spice, but just wanted to make you aware.

4. Cheeseburger Orzo by Slimming Violet

I'm not quite sure how my husband and I found this recipe, but we have been on an orzo kick lately and this one sounded good. Not to mention, you only need one pan and minimum ingredients to make the meal. I think the thing I could most compare the taste to is Hamburger Helper, but better.

Pro Tip: Depending on how much you like mustard, I would make adjustments on the amount. We found that a 1/4 cup was a bit too much for us so we have adjusted down some. AND, don't be afraid to experiment with other cheeses or ingredients. It changes the taste but is still so good. Just make sure to pick things that you know you enjoy with ketchup and mustard.

Another quick and easy crock pot meal where you just dump everything and go. I think this is one of my favorite ones because, like other meals, you can change up what you put in there depending on your preference. Not to mention, it smells amazing as it's cooking and makes the whole house smell good.

Pro Tip: This recipe can be eaten several different ways. I've eaten it as a soup or as tacos in the past depending on what mood strikes me. Plus, it is very good leftover.

Weeknight dinners don’t have to be complicated to be delicious. With a few easy recipes in your rotation, you can enjoy cozy meals without the stress. ✨

Do you have any favorite quick weeknight dinners? Drop them in the comments—I’m always looking for new ideas! 💖

Have a wonderful day,
Jackie

St. Patrick's Day Recipe Roundup {03.06.25}

Thursday, March 6, 2025

Hello and happy Thursday friends! I hope your week is off to a wonderful start and you are looking forward to a fun weekend ahead.  Tomorrow I'm heading to a book club where we play pong and discuss our most recent read. I'm excited to discuss the book we read and hang out with some lovely ladies.

For today's post, I thought it would be fun to share some St. Patrick's Day recipes that I've come across while searching Pinterest. I love trying to make themed meals around holidays or traditions when I can and St. Patrick's has a lot of my favorites: meat and potatoes.

To make the recipe yourself, you can click on the picture directly or the link below the photo. Shout out to the wonderful creators who shared these recipes for us to enjoy.

Irish Potato Pancakes from Veggie Desserts

Irish Stew with mashed potatoes by the Cagle Diaries

Irish Potato Soup by The Toasty Kitchen

Sausage Stew with Potatoes (Dublin Coddle) by All that Jas

Leftover Corned Beef Hash by the Irish American Mom

Irish Vegetable Soup by Cooking Chat Food

Traditional Irish Soda Bread by Lion's Bread

Don't these all just look so yummy. I am thinking that I am going to have to make some of the soda bread and the soup together as they both would be wonderful together. Plus, I'm a huge soup lover and it's still cold in Michigan so it's a great meal.

If you decide to try of these out be sure to let me know and the original creator know too! I know I love when I hear from you all so I imagine they would too.

Have a wonderful day,
Jackie

Hello and happy Saturday friends! We have officially reached apple picking season here in Michigan so I thought it could be fun to share a bunch of apple-themed recipes for you to check out.  If you didn't catch it, I shared pumpkin themed recipes last week so make sure to check those out too!

Every year we go pick apples with our friends (which we're doing in a few weeks) and I am excited to add some fun recipes to my list for this year.  I am a sucker for a deliciously baked apple recipe so these are giving me all the inspiration.  If you want to check out the recipes, you can either click on the image or the description and it will take you right to the creator of that recipe.  Please note, these images are from their site and belong to them directly - please refer to them for any questions.

Well I think that is all for today's post! Did you find inspiration for a new recipe to try today? I think I have my eye on the donuts or the muffin cookies.

Question of the Day: What is your favorite apple recipe?

Until next time,

February Recipe Roundup {02.26.24}

Monday, February 26, 2024

Hi friends and happy Monday! I hope you had a wonderful weekend and are looking forward to a productive and happy week ahead.  Today I'm starting a new series called: Recipe Roundup.  Justin and I have been working hard to cook more meals at home every month and I figured why not share what we've been eating or trying with you all.

Most of the recipes I find are over on Pinterest, but every now and then I come across a yummy looking recipe over on TikTok so I will be sure to share exactly where I got the recipes from so that I can give credit to the original creators! All you have to do is click on the images below and it will take you directly to the recipe.

One note for this one is that the chicken really wants to stick so you'll want to make sure to spray your pan well.

This is a newer addition, but we tried the skillet Mexican street corn and it's so good.  So when we need an easy meal I'll make tacos (using the seasoning recipe) and add this as a delicious side.

This recipe has been in our rotation for several years.  It's a good cold-weather meal that can be thrown in a crock pot and it reheats really well too.

The best thing about this recipe is you can easily switch up the veggies and it will still be delicious.  We typically have sweet potato, broccoli and carrots.  But I could easily see adding zucchini, asparagus or some other green veggie too.

We make this with a veggie (usually green beans) and a side pasta and it's delicious.

This is easily one of our favorite recipes and have made it several times since it was recommended to me by a friend a few months back (shout out to Felecia!) The only thing I'd point out is if you don't like spicy, cut back or eliminate the red pepper all together.

If you want to check out other recipes we like or are planning to try in the future, check out my Pinterest Dinner Recipe Board.  Obviously we ate more than these in the past month but these are a few of our favorites from the past month.

Well that's it for recipes this month! Have a recipe you'd like to see us try? Comment below or over on my Facebook page.  I'm always on the hunt for new things to try.

Have a wonderful day,
Jackie
