5 Quick and Easy Recipes for Busy Weeknights

If you’re anything like me, weeknights can be a bit hectic. Between work, errands, and trying to sneak in a little me-time, the last thing I want is a complicated meal that takes forever to make. That’s why I love having a few simple, go-to weeknight meals that are both delicious and easy to whip up. Tonight, I’m sharing five of our favorite recipes for busy weeksplus a few tips for making weeknight dinners as stress-free as possible.


1. Skillet Lasagna - Lil' Luna

If you love lasagna, but don't love the time and mess of lasagna, then I would highly recommend checking out Lil' Luna's Skillet Lasagna. It is so easy to make, only takes one pan and the left overs are so delicious. 

Quick Tip: You can substitute ground turkey or chicken in exchange for the beef and it is just as delicious. I imaging it would be very good with Italian sausage as well.

2. One Pan Roasted Sausage and Veggies - My Mommy Style

When we are having a crazy busy week, this is a meal that often pops up because it is so easy and it also creates very little mess. I found the recipe over on My Mommy Style's blog and she shared it as a meal prepping tip; however, this makes a good quick dinner too.

When we make ours, we use  turkey sausage, broccoli and sweet potatoes; however, you can use any veggie or potato that cooks well in an oven. 


Meal Prep Tip: Cutting your potatoes down into smaller sizes makes the cooking time go faster and the potatoes less prone to crunchiness. We also serve this over rice, but you can eat it without. 




3. Creamy White Lasagna Soup by Half Baked Harvest

I am a sucker for a good soup no matter what time of year it is and when my friend recommended this one to me last year, it quickly became a household staple. There is nothing better than a crock pot meal that is easy to get started and does not require much thought. Not to mention, it is sooooooooooo delicious. 


Pro Tip: The recipe calls for red pepper flakes. If you are not a spicy kinda person, I would advise either not putting them at all or adding them after serving. The soup was very good without the spice, but just wanted to make you aware.






4. Cheeseburger Orzo by Slimming Violet


I'm not quite sure how my husband and I found this recipe, but we have been on an orzo kick lately and this one sounded good. Not to mention, you only need one pan and minimum ingredients to make the meal. I think the thing I could most compare the taste to is Hamburger Helper, but better.

Pro Tip: Depending on how much you like mustard, I would make adjustments on the amount. We found that a 1/4 cup was a bit too much for us so we have adjusted down some. AND, don't be afraid to experiment with other cheeses or ingredients. It changes the taste but is still so good. Just make sure to pick things that you know you enjoy with ketchup and mustard.



Another quick and easy crock pot meal where you just dump everything and go. I think this is one of my favorite ones because, like other meals, you can change up what you put in there depending on your preference. Not to mention, it smells amazing as it's cooking and makes the whole house smell good. 

Pro Tip: This recipe can be eaten several different ways. I've eaten it as a soup or as tacos in the past depending on what mood strikes me. Plus, it is very good leftover.
