Hi friends and happy Monday! I hope you had a wonderful weekend and are looking forward to a productive and happy week ahead. Today I'm starting a new series called: Recipe Roundup. Justin and I have been working hard to cook more meals at home every month and I figured why not share what we've been eating or trying with you all.
Most of the recipes I find are over on Pinterest, but every now and then I come across a yummy looking recipe over on TikTok so I will be sure to share exactly where I got the recipes from so that I can give credit to the original creators! All you have to do is click on the images below and it will take you directly to the recipe.
One note for this one is that the chicken really wants to stick so you'll want to make sure to spray your pan well.
Tacos with Skillet Mexican Street Corn
This is a newer addition, but we tried the skillet Mexican street corn and it's so good. So when we need an easy meal I'll make tacos (using the seasoning recipe) and add this as a delicious side.
This recipe has been in our rotation for several years. It's a good cold-weather meal that can be thrown in a crock pot and it reheats really well too.

The best thing about this recipe is you can easily switch up the veggies and it will still be delicious. We typically have sweet potato, broccoli and carrots. But I could easily see adding zucchini, asparagus or some other green veggie too.
This is easily one of our favorite recipes and have made it several times since it was recommended to me by a friend a few months back (shout out to Felecia!) The only thing I'd point out is if you don't like spicy, cut back or eliminate the red pepper all together.
